What messaging service should you use

If you know each other but do not ever want someone else to read your chat or messages, use Signal or WhatsApp. Signal encrypts everything and doesn't record your info to a greater extent; WhatsApp encrypts messages, media only. WhatsApp records info like location, whom you are chatting with, so on except the actual messages and media in conversation.

If you don't know the person you are chatting with or going to chat with and don't mind someone else to read your messages, use Telegram as you can choose not to display your phone number on the other side of the conversation. They will only know your Telegram username and not your phone number. However, Telegram can read your messages if you do not choose encrypted mode.

Telegram will read your messages only when it suspects you in some issue. Generally, it won't read anything. If you are concerned with privacy you can choose to have encryption also.
